A Journey through Scotland: Understanding Scotch Whiskies!


We will taste 8 Single Malts, lightest to heaviest, not youngest to oldest. You, your friends and colleagues will gain new knowledge plus understanding for Scotch Whiskies history, mystic, character and heritage. 

Scotch Whisky – Blends and Single Malts – Country of origin is exclusively Scotland. The Distilleries style, cereal grains used (Single Malts must be distilled from 100% malted barley and Blends are a combination of various cereal grains) and steps to a finished product are crucial in identifying the differences.

Each of the 130+/- operating distilleries has their own unique traits due to its location and techniques = TIME / PLACE / ENVIRONMENT plays the vital role.

Scottish Single Malts are the most natural of spirits, formed more than any other by their surrounding environment. Therefore, they are very individualistic and most complex of all distilled spirits.

Even the same single malt may evolve differently in character with age and strength according to the type of wood in which it has come to mature. 

Single Malt Scotch and Blended Scotch are as complex, edgy, have the heritage, mystic and appellations as their wine cousins.

Wine drinkers (who drink distilled spirits) and Scotch drinkers are generally the same consumer and demographic.

All Scotch is Whisky, but not all Whisky is Scotch.

A Journey through America: Understanding American Whiskey!

We will taste 8 American Whiskies, lightest to heaviest, not youngest to oldest. 

You, your friends and colleagues will gain new knowledge and understanding for American Whiskies history, insights, mystic and heritage. 

Examples:
Bourbon – Made anywhere in the US, with a minimum of 51% corn plus a combination of rye, barley or wheat, distilled at 160 proof or less, not introduced to the barrel at higher than 125 proof and aged in charred new white oak barrels. The barrels can only be used once, and then discarded. 95% of the Bourbon is still produced in Kentucky. No additives can be introduced.

All Bourbon is whiskey but not all whiskey is Bourbon. 

> Sour Mash – Uses a quantity of leftover liquid from previous mash to start new mash.

A Journey Through Mexico: Understanding Tequila and Mezcal!

We will taste 6 Tequila’s & 2 Mezcal’s lightest to heaviest, not youngest to oldest. 

You, your friends and colleagues will gain new knowledge and understanding for Tequila’s & Mezcal’s history, insights, mystic and heritage. 

Tequila:
There are two types of Tequila:
100 percent Agave – produced entirely from the fermented juice of the Weber Blue Agave plant. Only the Weber Blue Agave can be used in the production of Tequila. 
Tequila (was called Mixto) – began in 1930’s due to shortage of Agave plants. 51% Agave sugars + other sugars sources. (Molasses, Corn, etc.)

Mezcal:
Country of origin is exclusively México. The Distilleries style- some are smokey and others not along with the steps to the finished product are crucial in identifying the differences.

Examples:
• Bourbon Whiskey – Country of origin is exclusively America. The Distilleries style, cereal grains used and steps to a finished product are crucial in identifying the product variations. No additives can be introduced.

• Tennessee Whiskey – State of origin is exclusively Tennessee. Distilleries and steps to a finished product are crucial in identifying the differences. No additives can be introduced.

• Canadian Whisky – Country of origin is exclusively Canada. The Distilleries style, cereal grains used and steps to a finished product are crucial in identifying the differences.

> Made from fermented mash of malted and un-malted barley, corn and other grains. 
> Types- Single Pot Still, Single Malt, Single Grain and Blended. 
> Triple distilled, 3+ years old in used casks previously used for aging Bourbon, Sherry, Rum etc.

All Irish Whiskey is Whiskey, but not all Whiskey is Irish Whiskey.

Cognac – Country of origin is exclusively France. The Distilleries style and steps to a finished product are crucial in identifying the differences. All Cognac is Brandy, but not all Brandy is Cognac. 

Brandy – Can be made anywhere in the world where agricultural products are grown. Country, agricultural product used and differences in both will be significant in showing styles.

A Journey Through the World of Liqueurs: Understanding Liqueurs!

We will taste 8 Global Liqueurs, sweetest to driest, not youngest to oldest. 

You, your friends and colleagues will gain new knowledge and understanding for Global Liqueurs history, insights, mystic and heritage.

Cordials / Liqueurs – Can be made anywhere in the world where agricultural products, plants and dairy products are grown and produced. Country, agricultural products, plants and dairy products and the differences in steps to a finished product (infused, percolated or macerated) are significant in showing styles. Generic vs. Proprietary plays a very important role in determining the spirits quality.

Beer – Can be made anywhere in the world where agricultural products are grown. Country of origin, agricultural products used including Hops along with aging techniques will be significant in showing their unique styles.

Meet Tom Cavitt

Tom began his journey into beer via home-brewing over 25 years ago. This began his discovery into  the innumerable styles of beer as well as the various brewing techniques and methods. Tom is also an avid historian with one of his degrees being a BA in History from the University of Texas, and has done considerable research into the true “Old World” styles of beer as well as how they were developed.


Tom has done numerous tastings varying from individual beer styles as well as “Old World” versus “New World” tastings. Throughout the years, he has taken numerous courses on beer styles and has judged numerous events through the Beer Judge Certification Program.


He has brewed commercially with many microbreweries throughout the United States including recipe developments and guidance on cellaring programs. Tom is also a proud member of the Cicerone® program, the Texas Craft Brewers Guild which promotes craft beer in the State of Texas, the Brewers Association which promotes craft brewery at a national level, as well as the Master Brewers Association of the Americas, a global organization focused on advancing, supporting and encouraging scientific research into brewing malt beverages and the related industries.
